How come no water came shooting up when the fire plug went flying across two yards? Is it possible to "videoshop" something like that?

Most fire hydrants (except some in warm weather/west coast) have a shear type mechanism. The hydrant operates a valve below grade which remains closed until the hydrant is opened - even if the hydrant itself is sheared off.

With a few exceptions, the gushing hydrant is pure Hollywood.

That is absolutely correct. I had a buddy hit one in a Geo Metro while staring at a girl laying out in her front yard. Actually, I think the Metro took the brunt of the damage. It was pretty hillarious.
