My wife got a rather unique Christmas present, about a pound of various spices. Now most were things we already use but we also got a couple we aren't used to..

We now have a big ole bag of Juniper berries, not enough to start a distillery tho', and I have heard that you can use juniper to make very good marinades for pork. No recipe on hand though.

So have any of you folks made a juniper berry pork marinade that you'd be willing to share?

Search for Juniper in recipes over at Food Network and there are 117 hits. Haven't tried any myself. Apparently they are an ingredient in making your own Sauerkraut.

We use them when we pan fry fresh caught brookies. Sprinkle them in the oil and on the fish along with salt and pepper. :thumbup:

I've eaten pork and lamb cooked with juniper to good effect but haven't used it myself. I have to admit to a slightly negative bias based on a lifetime of pruning and digging out landscape junipers planted by others, but that's an entirely different conversation.
