FYI, I took the girls to Wendy's last night and they had a promo for a Bacon & Bleu burger, so I had to get one (bacon AND bleu cheese == :)). Applewood smoked bacon and real bleu cheese. That sucker rocked. :thumbup: :thumbup: I don't do fast food very often either. Might be a test here since we get a lot of those in Cbus, but check for it if you are looking for good eats fast.

Caught this recipe in the local fish wrap yesterday:


BOW-TIE PASTA WITH BACON PESTO

Makes 4 servings

6 slices thick-cut bacon (preferably smoked)
Salt and ground black pepper, to taste
12 ounces farfalle (bow-tie pasta)
2 1/2 cups (about 4 ounces) fresh basil
1/4 cup pine nuts
3 garlic cloves
1/4 cup extra-virgin olive oil
1 tomato, seeded, diced

In a large skillet over medium-high, cook the bacon until crisp, about 8 minutes. Use a slotted spoon to transfer the bacon to paper towels and drain well. Let the bacon cool slightly.

Meanwhile, bring a large saucepan of salted water to a boil. Add the pasta and cook until tender but still firm to bite. Reserve 1/4 cup of the pasta cooking water, then drain the pasta and return it to the pot.

In a food processor, combine the bacon, basil, pine nuts and garlic. Pulse until well-chopped. With the processor running, drizzle in the olive oil until the ingredients form a thick paste. Stop the processor and scrape the sides with a rubber spatula as needed. Season with salt and pepper, then pulse again to blend.

Add the pesto to the pasta and toss well. Add just a bit of the pasta cooking water and toss again. Serve topped with diced tomato.

PER SERVING: 576 calories; 18 g protein; 68 g carbohydrates; 4 g fiber; 26 g fat (4 g saturated); 13 mg cholesterol; 440 mg sodium

I'm guessing infusing beer with greasy cooked pork belly with smoke flavoring is solidly in the miss column. :yuck:

It does occur to me that an "unfortunate combination" thread could be amusing. Bacon infused beer can't be the only bad combination out there...:D

The entirety of the Rauschbier family is bad enough, and that's just with the smoky flavor. I can't imagine what adding the actual fat would do.

Then again, it couldn't be any worse than the watermelon beer I had the misfortune of sampling at ACBF Boston this year. :yuck:

1 cup flour
1 cup corn meal
1 tbsp baking powder
3/4 tsp salt
1 tbsp sugar
1 egg
1 cup milk
1/8 cup melted butter
1/8 cup melted bacon fat

mix & bake at 400 for 20 minutes

or add chili powder and a pinch of cayenne to the cornbread. Roll it out really thin on cookie sheets. Cut into bite size pieces. Bake in a very hot oven till slightly browned. Yields homemade Frito type chips. :thumbup:

Not surprising that Ari Weinzweig is behind that. He's been a driving force behind educating people about all kinds of foods since he and his partner started Zingerman's.

He is the one that got me onto English farmhouse cheddar. If you think bacon is good then you need to try a grilled cheese sandwich with a rustic bread and English farmhouse cheddar like Keen's or Montgomery Farms. Ahhh....

They hired two experience women from Neal's Yards in London to run the cheese operation at Zingerman's and they do a great job. I was told they were a bit vexed when they turned up and discovered Ann Arbor was not a big city like New York...:)

Okay I'll admit it, I have never cooked bacon in a microwave. Actually I've never cooked damned near anything in a microwave.

So my question is, does it really work? Is the resulting bacon any different from from what comes out of my iron skillet?

Bacon in the microwave == :thumbup: :thumbup:To me it's more crispy, as it sits on ridges instead of laying in the bacon fat goodness. I cook it both ways, but for standard bacon and eggs, I just use the microwave.

OK so I did this. Made a nice smoked pork roast too. And mashed potatoes. And garlic bread and veggies.

All way good. But don't know if this is supposed to be a side (for like pork, which I did, which was good) or dessert.

Who cares? Candied bacon is "dog treats for people". :D

Use less flour and oat meal of more butter for the crumble though.

For various reasons, including doctor's orders, I am on what is known as the Primal Blueprint "diet".

I can have as many eggs as I want, tons of veggies, plus fruit and nuts (no peanuts, because they are a BEAN, gasp). Basically, what was available pre-agriculture era.

And meat products of almost any kind. This includes bacon. Now, to be honest, I had never had anything except microwave/microwaved bacon in probably 20 years, but now I'm making my own... in the skillet, in the oven, wrapped around chicken and beef.

I love bacon more than all of the foods I now cannot eat (grains, sweets, potatoes) put together. Easily. I oven-bake to get a spicier flavor, I skillet to get a more traditional crisp, I put three strips on top of my omelet before I fold it...
